Recipe: Pumpkin Oat Cookies

This is more of a “breakfast” biscuit and is made with pumpkin, rolled oats, wheat germ, and bran. We are talking whole grain, high-fiber guiltless biscuit-like cookie. And SOOOOO yummy!

Pumpkin Oat Cookies

Bake at 400 F for 10 minutes

Yields 2 dozen cookies

Wet Ingredients

Cream together…

1/2 cup white sugar (Increase to 1 cup?)

1/2 cup (1 stick) butter

2 eggs


15 ounce can pumpkin

1 tsp vanilla

1 cup brown sugar


Dry Ingredients

2 cups unbleached flour (Decrease to 1 1/2 cups?)

1/2 wheat germ

1/4 cup wheat bran

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp clove

2 tsp baking powder

1 cup old fashioned rolled oats


This is trial one of this recipe. I will be remaking it Week of 2 November with some adjustments to make the cookie lighter in weight.
